Villa Galicia - Bourbon Honey Process 250g
Honey processed coffee from one of our favourite producers, Mauricio Salaverría, from his farm Finca Villa Galicia, in El Salvador.

Mauricio owns Divisadero Coffees, which comprises several small farms in El Salvador: Divisadero, Himalaya, Cruz Gorda, and Villa Galicia. Finca Villa Galicia is a farm perched on a hillside overlooking a town called Concepción de Ataco - a vibrant and colourful place with painted murals on the walls of properties surrounding a central town square.
Villa Galicia has 12 hectares of coffee, growing under approximately 50% natural shade cover - a veritable coffee jungle - including many traditional and some rare varieties such as Bourbon, Gesha, Pacamara, Maragogype. Mauricio has installed a wet mill on the farm which uses harvested rain water for processing washed coffees, and has rows of drying beds on the edge of the farm, where a the breeze that climbs the hill aids the even steady drying of the harvested seeds.
This lot is a honey processed bourbon. Bourbon is an old world variety of coffee - very widely grown across El Salvador and recognised for its sweet profile. 'Honey processing' takes the outer layer of fruit and pulp from each cherry post-harvest, and dries the seed with the remaining mucilage (sticky, syrupy juice) still attached. This process introduces more complex sweetness to the final coffee, with the advantage of using significantly less water than traditional washed methods.
